Peter Peter pumpkin eater...

Part of the reason I love fall so much is because I love pumpkin
Typically I just make pumpkin cookies and pumpkin pie - until last year when Benson told me about his mom's recipe for pumpkin waffles with home made buttermilk syrup

We got a fancy new hotel style waffle maker yesterday so today, that's what we had for dinner... {and I am already craving them again!}

You have to make them with the syrup or they just aren't the same!
Pumpkin Waffles
2 ½ c. Flour
1 T. Baking powder
2 tsp. Cinnamon
1 tsp. Ginger
½ tsp. baking soda
½ tsp. Salt
½ tsp. Nutmeg
¼ tsp. cloves
4 Large eggs
2 c. Buttermilk*
1 c. Canned pumpkin
½ c. Brown sugar
¼ c. Unsalted butter (melted)
1 tsp. Vanilla
Combine flour, baking powder, cinnamon, ginger, baking soda, salt, nutmeg and cloves and set aside. In a large bowl whisk together eggs, buttermilk, pumpkin, brown sugar, butter and vanilla until smooth. Whisk in flour mixture and blend until smooth.

Buttermilk Syrup
½ c. Butter
¾ c. Sugar
½ c. Buttermilk*
Bring to a boil then remove from heat and add:
½ tsp. Baking soda
1 tsp. Vanilla
Stir well and serve

*You can also make your own buttermilk by adding 1Tbsp. of vinegar or lemon juice per cup of regular milk. Stir and let sit for a few minutes then stir again before using.

have them with pears.. i guess it is kind of like fried apples, but pears. Sauteed in butter and cinnamon sugar. that is yummy.
